I'm wanting to paint some interior pieces in my car, but I'm not sure what kind of paint I am supposed to use.

Also, I'm wondering how you take out the center bezel that holds the stereo and heater controls and stuff.

 

In general used paint for the plastic pieces (I suggest krylon fusion plastic paint) and VHT black vinyl dye for the vinyl parts.

Well, I use Duplicolor products. And usually 800 grit wetsandpaper. I don't know what year or anything your car is, so I can't help you there.

But what I usually do to paint stuff.. Or what I did to paint my plastic valve cover (D17).

Step 1) Clean the piece you are going to paint with some rubbing alcohol or something to get all the oils and stuff removed so the paint will stick better.
Step 2) Use the 800 Grit wetsand paper and sand the plastic down to make it smoother (It makes it smooth, and the finish product will turn out alot nicer)
Step 3) Spray on a couple light coats of the primer. Be sure to get everything coated good, or the paint wont stick right and will probably chip off easily. Allow to dry.
Step 4) Now spray on the color of your choice. Make sure you use several light coats, not one heavy coat to, avoid runs. Follow the instructions on the paint can to achieve the best results. Allow to dry thoroughly.
Step 5) Apply a few coats of clear coat spray paint, to add a high shine and to add extra durability.

Now.. I use Duplicolor products, but thats just a personal preferance. Thats a general guide. An extra step(optional) that I do is.. Sand, primer, sand, paint, sand, paint, clear. You don't NEED to do that.. But I feel it makes the paint stick a little better, and have a better outcome, but thats just my little personal preferance. And, I usually put 3 coats of primer on, 3~4 coats of paint (Depends on how you like it), and usually 3~4(Depends on how shiny you want it, but I usually go with 3)

It looks like you have an EK. To remove the central controls use a screwdriver to pry out the tabs around the sides, there's one in the center of each side, then it should slide right out. If that didn't make sense let me know, I can take some pics later when it gets light.

EDIT* Also pry out the things that hold the defrost button and the emergency light button. there are screws behind that.
