pen tool to select and then u use image>adjustments>hue and saturation
i do it different, it depends on what color the car is... like if its red, then i would just go to image>adjustments>hue and saturation and select red and change the hue to what ever color, this will let u only change red if u select red, and if u want to make the car black u the the same thing but drop the saturation and the lightness down to zero
I never use a pen tool to select. I use the magnetic lasotool to begin with then after I have the main selection I use a quick mask which is way easier for fine detail because it uses the paint brush to select. Black selects and white deselects the area you want. And if you want a half tone use a shade of grey and it will look kind of feathered. With a quick mask it's also easy to save selections.

I never use the selection tools, I use adjustment layers with layer masks
