Default Gauges

I want to monitor my fuel pressure, oil pressure and air/fuel mixture but i dont know whats a good PSI to go up to on each gauge. looking for an answer please! After its all said and done i will have Stage 2 crower camshaft and AEM cam gear, Crower valve retainers and springs, new valves, maybe new piston heads and connecting rods. I am not sure if all those parts make a difference with what PSI the liquids will actually hit, but just letting you all know. If theres any other gauges i might need or if i dont need one of those then please let me know. thanks
