I got some rims that have an offset of 42mm, but i wanted 40mm offset. I have 205 width tire and about an inch drop and the rims are 16x6.5J, will I have rubbing problems????

What is the height of the tire?

1" drop is nothing, you'll be fine unless you put some 205/75s on there or something.
