The cams can only let air/fuel into the cylinder, the computer determines how much fuel enters the cylinder so no the cams can't lean or rich the AFR. The cam just opens the valves.

for the most part yaa.. but the cams can lean it out. i can lean out stock injectors with my current cams but the engine will run fine on stock cams.

Think of it in this way. Stage 3 cams make a higher lift for a longer duration correct. For that period of time you have more air going in to the motor, but the ECU is still putting out the same amount of fuel in the motor due to closed loop. So, you have quite a bit more air going in to the engine, but just about the same amount of gas. This espeically matters when you're in the higher RPM's.

The car has an air/flow meter, but the only thing that the cam could do to make it lean would be to bring more air into the cylinder than the fuel injectors could spray.

I hope you know what you're doing. You can't just drop in a stage 3 cam. You're gona need all new super strong springs and retainers. Not to mention your gona have a tough time idling with that agressive of a cam. I'd say stage 3 isn't really necessary unless it's an all out drag car, or you drive to work at like 9000rpm every day.
