Default Car water temp raising!

I got a 1996 Honda Civic EX standard coupe. I noticed a few days ago that my water gauge was goin up about 3/4 the way when my car idles for about 10 minutes. I did a little test. I opened my radiator and turned on my car...i let it sit there for a few minutes...the gauge began to rise...and my fan never turned on...unitl the gauge got up to about 3/4 of the way..then the fan turned on and the fluid in the radiator went down. So i went to autozone and bought a new tempature sensory unit...i installed the new one in my car. I then did my little test again...nothing...i got the same results...what do i do next? should i change the thermastat?

start with the thermostat, it maybe sticking... when you do that and nothing happens, check for leaks, specially where your water pump is

will it come back down after going up high; have you been adding water ??
if a thermostat sticks closed, i think it will stay that way
