Default What temp is too hot?

I am curious now that I have my aftermarket gauges working. What water temperature should I start worrying that the engine is overheating? I live in San Antonio, so I figured it would be good to know since I just got done putting in my b18 engine.

I am pretty sure that coolant temperatures should not rise much above approximately 205F.

Mine has been around 200 to 215 most of the time. I have seen it go as high as 219, if you believe the gauge.
