are struts adjustable, or do you have to buy a set specificaly for the amount of drop you want with your springs? In other words, will a nice aftermarket set adjust from low back to stock if you want them to?

well they have the adjustable ones which u can adjust to the height u want

you can get adjustable struts, i think tein makes some. i would not go with skunk 2 springs, i have not heard good things about them. stick to either tein, neuspeed or h & r.
