Default Which head gasket to use??

Hey people! Well I ordered all my parts for the mini-me swap on my d15b7. I got a d16z6 head, chipped p28ecu, a d15b7 water pump, and timing belt. My question is....what is the best head gasket to use to maximize power? I have heard talk about 2 and 3 layer gaskets, but which would be the best??

2 layer deff if you want a tad bit more compression. but a 2 layer is just a 3 layer gasket with the middle layer removed.

Aren't these gaskets metal?? How do you remove the middle layer? Haven't looked at one in person yet, so pardon my questions!
