Default will head gasket replacement cause oil burn?

I am talking to a reputable honda repair shop about replacing the head gasket on my 1995 civic dx. The owner of the shop quoted me about $800.00 and said he cannot promise that the car won't burn oil after the job is done. Does this price sound reasonable and what exactly is he talking about when he cannot guarantee that the car won't burn oil after the job is finished?

if the engine have fried piston rings it will burn oil like i fire burns wood, he said that to cover his *** in case you came back sayin that it didn't start burning oil till after you took your car there. and $800 doesn't sound too bad, but you could do it yourself for about $120
