what color is your interior? if it's black i say leave it black
you will get tired of colors. if it's not black you could paint it black, by removing the various parts from the car, cleaning them, and using some duplicolor plastic paint for trim, and vinyl paint for the dash and door panels.
it's really a lot more work than it's worth IMO
i got tired of my tan interior so i sold the car and got a new one... too much work to switch colors. (there were other reasons i didn't like the car too... automatic tranny, 4-door, no power options, crap engine)

It'll probably take you all day to remove all interior pieces and clean/paint them. Then you have to let the paint cure for a long time. Then when putting the pieces back in be careful with the paint so it doesn't chip or anything.
I painted only a slight part of the interior in my old civic. Believe me, if you're not that skilled with a rattle can and not patient, it will probably turn out like crap. It's really not worth the time.

Don't paint, use dye instead

If you want a really good way to liven up your interior, I would say get some colored racing seats, in red/black or whatever else you like. It's the most noticeable thing about the interior, and you can enjoy its looks and its comfort.

+1 great suggestion. that's definitely the best way to make your entire look more exciting.

also, do the colored dash lights and a/c control lights DIY

grey interior really isn't that bad. i would be satisfied with grey... now tan, that's an ugly interior color. the civic's use a really ugly shade of cheap looking tan. leather tan interiors on other cars are nice however.
