If she just came back up to you out of nowhere there is something she finds interesting about you, first thing you need to do is say your sorry for being a dick the other day though.

pete she is interested though if you hadn't seen her for a while and she recognized you again and made conversation. so her being interested is not an issue. like they were saying try and small talk to see how shes been doing and hit it with a "now that i know where i remembered you from, can i get a second chance at having dinner?". be genuine and you be straight. oddly enough, this exact same thing happened to me. there was a girl across the room in one of my math classes that caught my eye. i was just able to talk to her a couple of times without getting to ask her to go out sometime before we changed classes and didn't see each other anymore. once i eventually saw her again at a graduation, i jumped on it. she and i have now been happily together for 2 years and are planning to get engaged. so go get her tiger!
