Hey i was just wondering if vtec will kick in and do anything if my knock sensor is broken/unhooked

The knock sensor just senses enginedetonation or misfiring and sends an alert to the computer which than retards your timing. other than that it has nothing to do with the rest of your vehicle. But if you do have a detonation issue and the sensor is not active to read it, the V-tec may be the final nail in your coffin as it gives you that extra punch to the top end as revs get higher. I would get that looked at, unless you want it unhooked for whatever reason.
