Default temp guage says I'm overheating

Hello,

After 3 different mechanics tell me they can't find out what's wrong - but now at least I have a new thermostat - I have the same problem. After driving for a while my temp guage starts heading to 'HOT' and wanders back and forth.
Yes the fans are working, no leaks / plenty of fluid etc.. One mechanic measured the heat of the engine and said it was at normal temp, while the guage in the car was totally to the max hot..!!! I just keep paying for mechanics to tell me they can't figure it out. Also, sometimes the AC gets warm when the engine is saying it's hot. HELP! I would check to see if the fan works and if the connections to the sensor is connected and working properly. a bad heat sensor can do that
