Sounds like its just reving up and down.
Maybe you have air in your cooling system.

it cuts off after about 3-5 minutes running could that still be the cooling

FITV. Clean it and reposition it in the correct spot by screwing the piece inside to where it needs to be. Should fix it.

Did you try bleeding your cooling system?

i did my car runs for a while reving up and down and then about 3-5 mins later it cuts off

you have to adjust the fitv to the proper specs not just clean it to fix it.
