1995 Civic - AC cold for 2-3 minutes, then warm.

I have a 1995 Honda Civic DX. Car ran great, cold AC, hot heat, etc. Had overheating issues. Replaced the headgasket, water pump, timing belt, plugs, etc.
Car runs great again with the exception of the AC.
The temp gauge in the car only rises about an 8th of an inch at most. Never goes up to it's normal spot pre-overheating issue. I can turn the AC on, but it'll blow cold for about 2-3 minutes and then it goes warm until the car is cold again. Heat works fine.
Where should I begin my troubleshooting?

Engine doesn't warm up -- thermostat stuck open or wrong thermostat. You should fix that promptly because it's hurting your gas mileage.
A/C works intermittently -- Usually this is because the compressor clutch gap is too wide. Check if the condenser fan still comes on and the engine idles up slightly when you press the A/C button. Clutch gap can be reduced by taking shim washers out.
