rust proof not to sure about. remember that part gets very hot!!!!!
i just bought some new nuts from hardware store that matched original style... i dont know of any stainless steeel nuts but your hardware store MIGHT have some but probably not.
but new nuts will not tend to rust to fast so they should last for awhile looking just fine....
or if you wanted alittle better looks then paint the nuts with some 1500 high temp paint and hopefully that will keep them rust free.... but it would help either way.. only downfall is you have to paint them AFTER you torque everything down and retorque them after afew trips. because if you just paint the nuts then most likely the socket wrench would chip the paint right off.
