Oh, God... poor car. It's a mustang, too. Oh, well; at least it's a 99/00. Still, it's a waste...
Anyway, honestly, I'm on the fence about the interior. If you use the right shade of blue it could look pretty nice, but at the same time less is more with interiors. The problem with flashy interiors in a daily driver is that you have to see it all the time, and if it's too flashy, you start to hate it.

I think you should keep it plain and simple. Less is more. If you want red, I recommend just having like some black racing seats with red stitching, and black leather shift and e-brake boots with red stitching. And then you could put some red LEDs in the cluster and in the dash switches. I think that would be the cleanest way to do it.

i have a website that sells some stuff you mentioned but do you have any that you go to that i can check out? Also i want to put a new lip kit on my car so i can tuck in my led undercar lights so they dont show
Get a stock lip, they look the cleanest. Nicest part is it bolts right on.

To me, the hardware kit is worth it for that nice clean install.
You can get the hardware (and the lip) from a junkyard if you can find a 92-95 Civic EX coupe or a 92-95 Civic VX hatch.
For the boots, I recommend this:

It's a great deal and it's REALLY NICE leather. This guy does top notch work. I had him do some custom measurements on the boots to accommodate for my short shifter (the shaft is longer so needs a longer boot to look right) and for my e-brake handle. They both fit perfect.
For cluster lights, read the caption in this picture. For number of bulbs and how to do it, follow this DIY. I recommend the "HP" versions of the bulbs Danomatic93 used... they have a wider beam angle.
