Back again with another super easy yet mouth watering "recipe."
Homemade Pizza!
For a little more than what you'd spend on a couple Digiorno frozen crap patty pizzas, you could buy enough supplies to make at least 4 of your own pies. Toppings are completely up to you as everyone likes different stuff. The only guideline I suggest following is using good products, and a lot of em!
I used cheap, outta the bag dough this time, but you can pick up pre-made goodness at most bakeries, italian markets, etc..
What I used..
Dough
Sauce ("Traditional/Original" spaghetti sauce works good. Super basic allowing you to season it to taste.)
Basil
Oregano
Crushed Red Pepper
Some pre-mixed crazy italian seasoning (found it at my local chain grocer)
Pepperoni
Ham (regular ol' lunch meat style, chopped into small strips)
Fresh Garlic (finely chopped)
Black Olives
Green Peppers
Feta cheese
Mozzarella (The real stuff is where it's at, but I was too cheap to buy it this time)
Roll out your dough into whatever shape you want, and place it on a LIGHTLY greased cookie sheet (Pizza stone is the way to go, but i dont have one :|). Spread sauce over it completely, and add your seasonings. Drop on all your chopped goodness, then cover in Mozzarella.
Bake that **** in the oven at 450* for 12 minutes or so, checking frequently to make sure it doesn't burn. Once your cheese is JUST BARELY starting to brown, and your crust is nice and crispie, pull it out, cut it up, and enjoy!
I Highly recommend pairing it with a nice Pale Ale. Typically I'd recommend an IPA but with how thirsty this pizza will make you, you'll want something a little lighter and smooth to chase it down.

No one else is cooking at all? Snowing here, and I decided to fire up the grill. 

Easy stuff.

- Toss cheese on top and let melt slightly

Forty's Own stuffed beer peppers.
My wife hates peppers of all kinds, so we never eat this stuff. But last night she went out to dinner with one of our friends so I decided to seize the moment. Heres what I bought..
1 pkg of HOT Italian Sausage
Couple Jalapenos
3 big green bell peppers
1 8oz pkg Cream Cheese
Shredded Mild Cheddar
Fresh Garlic (chopped)
2 servings of rice (I wanted brown rice but we only had white..oh well, it worked)
Olive Oil (1tbsp)
Beer (you'll only need 6oz, feel free to drink the other 6
) Highl recommend using a GOOD beer! I went with Sierra Nevada IPA

Basically what I did here is combined a recipe for stuffed peppers and a recipe for "Beer Dip," the results were outstanding!
Clean and de-seed your jalapenos, then chop them up. Clean the bell peppers, gut em, and either chop them in half, or cut the tops off (it's up to you, i cut one in half and took the tops off the other two). Brown the sausage in a fry pan, adding in the seasonings, chopped jalapenos and fresh garlic to saute about 2/3's of the way through the browning process. While that's happening, cook your rice. Then place your cream cheese brick into a big mixing bowl, and toss it in the microwave for 30 seconds to soften it up.
Once the sausage and rice are done, combine Sausage/garlic/jalapeno/seasoning mixture, cream cheese, rice, jalapenos, beer, olive oil and some shredded cheddar into the mixing bowl, and mix it all up.
Stuff the mixture into the peppers (load em up!), sprinkle a bit of cheddar on top, then bake in an oven pre-heated to 350 for about 25 minutes. Once the top looks bubbly they're good to go.

Today we talk about Pulled Chicken Tacos (which as leftovers turn into pulled chicken nachos, pulled chicken sandwiches, etc etc etc..)
Here is what you'll need:
-4 good sized chicken ******* (boneless and skinless)
-Chicken Marinade (1/4 cup)
-Your favorite Salsa (1/2 cup)
-Lime Juice (2 tablespoons)
-Chicken Taco Seasoning (1 packet)
-Water (1/2 Cup)
-Your favorite beer (1/4 Cup) (Pale ales work best with chicken, but Stouts can be used too)
And then whatever you eat on your tacos. I topped mine with lettuce, sour cream, black olives, cheddar cheese, and salsa with Refried Beans on the side.
1. Start by thawing and cutting the fat off of your chicken *******. Place them into the bottom of a pre-oiled crock pot. (I used spray cooking oil, not a ton, just enough to keep anything from sticking)

2. Chop some fresh Garlic and sprinkle it as evenly as possible over your chicken.


3. Combine Marinade, Salsa, Lime Juice, Taco Seasoning, Water, and Beer and stir it all up. (Salsa not pictured because I'm dumb but I used Chi Chi's original Medium Salsa). Also, I blended my salsa to elimate chunks, but that's personal preference.

4. Pour sauce and seasoning mixture over the chicken, and turn the Crock Pot to HIGH. It'll take 5-6 hours depending on your crock pot. Stir every 30 minutes or so.

5. After about 5 hours the chicken will be easy to pull apart. Just take two forks and gently pull the pieces apart until it's all shredded, then cook for another 30-60 minutes.

I made Reubens for the Superbowl, they were delicious. Here is my twist on a classic:
What you'll need:
-1 Lb. sliced Corned Beef
-Cheese of choice (I used Tipperary Irish Cheddar, MONEY!)
-Sauerkraut (Don't cheap out, get something decent! Or, make your own, which I plan to start doing soon)
-Rye bread (I used marble Rye/Pumpernickel)
-Thousand Island Dressing
-Olive Oil
-Butter
Pour a bit of Olive Oil into the bottom of a fry pan. Drop in your corned beef and let it cook until it turns from pale to rich in color. Once it's just about ready, toss your cheese on top and then cover the pile of heavenly awesomeness for a few seconds to that the cheese melts from the steam.
Split into four "piles" and set aside. Lightly cook your 'kraut (in the same pan/oil) for just a minute or so until it begins to darken in color. While that's cooking, butter one side of each slice of bread.
When the krauts done, assemble the sandwhichs and drain oil from fry pan. Toss sandwiches into the pan and allow to lightly brown on each side. Be careful when you flip them so they don't fall apart!
You can either top them with Thousand Island dressing, or serve it on the side as a dip. I prefer the latter personally.
Serve em with chips, veggies, whatever floats your boat. Most importantly, BEER!
