Show Your Desktop!
I just like it so I can tell if something's running that I don't know about. If I don't have any windows open and the CPU usage spikes, the graph will let me know. It's also really useful (again, hidden task bar) for when AVG starts running a scan; if I look at the graph before opening a window and the usage is all over the place, I know to pause the scan while I use the computer. Honestly, the CPU gauge is only there because it looks cool IMO; the graph is 10x more useful.
You know one thing I think is funny about the "gadgets" is that people install all these CPU and RAM monitors, and while they only use a small amount, these things are taking up CPU power and RAM just to keep them running. I just think it's funny because I mean really most people do not need to see their CPU and RAM performance in the first place, and that it takes up resources just to run it is funny. When I had a PC I had windows sidebar turned off because even at 2.53 GHz, 2 GB RAM, and a **** and span regularly defragged and organized filesystem, windows sidebar still made the computer run noticeably slower.

It's my desktop and I'll rice it if I want to, lol
But on a serious note, it is nice to have the gauges/graphs for the reason reaper mentioned. At work I run a ridiculous amount of memory sucking software, so it's good to have the little warning when my scanners are running so I can pause them while rendering, etc..
I only have 2GB ram and running sidebar.exe doesn't have an effect on speed; I've run it with and without the sidebar.
