First things first. Have you set the gain on the amps correctly?

i would take it back the shop and have them check it out. if they did the work and it doesn't soud right, they need to fix it.

Have the shop check the gain, the filter selection, and of course, the built in crossover points. I bet it's one of those.

Crossover points is one thing you should check.

Also, headunit power cannot compare to AMP power to drive your mids/tweets. You are going to get some distortion when you push the speakers towards the boundaries of what the deck can push. You can never have too much power. I had 300 watts RMS going to my mids/tweets, and it sounded GREAT.

I would go for a preamp over an EQ, but that's just me. I like the Audiocontrol preamps. Kicker makes a nice one as well.

That is a classic case of poor power distribution. Memphis ALWAYS makes inefficient, hungry speakers. Post the specs of them so I can take a looksy. Also, if you think about it, your head unit has an internal amp no bigger than your fist. You might want to look into a 4 channel for the speakers.
