The paint wil eventually rub off. If you are gonna do anything dye it. The paint will look like crap within 6 months guaranteed. Plus Ive had an airbag go off in my face. Getting knocked out and waking up with burns all over you is not fun. Plus breathing in that powder will make your head burn and pound for hours.

ive worked on many different car including hondas ,changing signal switches / ingnition locks ect . the only thing i do is disconnect the battery & wait about 10 minutes before taking it apart . never once did i ever have one go off
& ive been fixing cars long before air bags were on cars

Not true, If you do it the right way it will last many years. I painted my old car inside and it lasted till the day I sold it though winter and summer, a little over a year. That was with spray cans. If you do it with automotive paint, it will last 10 times longer too

Luckily (and unluckily) for me, I don't have air bags. I want to paint my dash gray. Because I am painting the car black. IS there a special paint out there to paint the dash with. And is it better to leave the dash in, or just tape and paint while its in the car?

Yeah disconnecting the battery might work, but i would do as hayne's says also and disconnect the connectors because it also says how the SRS system has a backup power unit within the SRS unit that will fire the airbags during an accident just in case the battery is crushed or not working for some reason. Be safe, take a few extra minutes to disconnect the connectors
