I think your in the wrong section, this topic should be in general tech help. If you disconnected the first O2 sensor (before the cat) then you are in big trouble. You car cannot run efficiently without the first O2 sensor. You will most likely be losing any power you would have gained from the headers by not having the first O2 sensor. If the second O2 sensor (after the cat) is the one you have disconnected/removed, then your engine's performance will not be hurt. This O2 sensor pretty much tells the PCM if the cat is working or not. It isn't anything to worry about but you will not pass emissions without it. If the Check Engine light is really bothering you then you could take the bulb out. I would not reccomend this. I recommend finding a way to have both O2 sensors attached and running. That first O2 sensor is very critical or your car will not know how much fuel the engine needs.
