Biased opinion= 99-00 EX coupe. (and I saw your project thread saying you wanted one possibly)
I agree with supersize about the EM1 (stated in your project thread), I'd be too worried about someone wanting to steal it. EP3s aren't a favorite of mine.
Also, your insurance will probably go up from totaling the Civic, I chose the cheapest to insure from your list in the poll, too.

EJ1 > everything on that list
If I had to choose from the list, I'd go EJ8. EP3's look like mini-vans and have the retarded half-brother of the k20a3, not to mention you can't slam them like you can EF/EG/EKs. Everyone seems to think their EM1's are made of solid gold or something, and tend to ask double the KBB value. I still see people asking $10k+ for a 10-year old civic.
EJ8's are cheap, easy to slam, have one of the best single-cam engines honda has made, and parts are cheap and easy to find (HF manifold, anyone?). Not to mention the b16a2 creates 7 ft*lbs of torque more than the d16y8. That's not a lot.
