I need some help with abit of a mystery I have

Ive got a D14A2 Civic oval racer with dual carbs fitted and seem to have a problem keeping it cool. Tried new radiator bigger fans and heater matrix under bonnet.

Engine stays at around 95 on idle and then while racing after about 1.5 mins the temp is over 120 and cant keep it down, does anyone have any suggestions?

Also looking to rejet my carbs and rebuild them but cant find anywhere which recommends the right needles/jets etc?
