Temp gauge going crazy

Temp gauge going crazy
Hey All, I've got a 05 Civic with 121,000 miles on it and all of a sudden my temp gauge with rise and fall randomly. Coolant level is fine, what else would cause this? Bad thermostat? Coolant Sensor? I'm hoping to head on a trip soon but I don't want to risk anything by running the car like this
